Ingredients and substitutions.

This strawberry bars recipe requires different ingredients, some of which could be substituted according to your needs :
- Strawberries: While I recommend using organic fresh strawberries, they’re not always available. Therefore, you can also use frozen strawberries, but make sure to thaw and drain them to avoid excess moisture.
- Cornstarch: here it acts as a thickening agent of the juices released by the strawberries.
- Lemon Juice & Lemon Zest: It brightens and complements the strawberries’ taste.
- All-purpose Flour.
- Granulated Sugar.
- Room Temperature Unsalted Butter. You can also use a vegan or plant-based butter.
Size adaptation of your strawberry bars.
I wrote this recipe for an 8’x8′ inch pan, but you can easily adapt the recipe to bake bigger/smaller pan. Simply multiply the grams measurements of each ingredients by:
- 1.27 for a 9×9-inch pan.
- 1.8 for a 9×13-inch pan.
Customize this strawberry bars recipe.
You can easily customize this recipe to your own taste by :
- Adding other kinds of berries to the strawberries for a mixed berry crumble bar.
- Add oats or nuts to the crumble topping.
- Spread a thin layer of melted chocolate on the base before adding the strawberries.
Make the Strawberry Bar.

- Preheat your oven to 350°F (175°C) and line the bottom and the sides of your 8×8-inch baking pan with parchment paper.
- In a mixing bowl, add the sugar, the flour, and the room-temperature butter. Use a fork, a stand mixer, or your hands to combine it all together until it gets crumbly.
- Press half of the crumble mixture at the bottom of your baking pan.
- Then, slice the strawberries and add the sugar, the cornstarch, the lemon juice, and the lemon zest to them. Mix until combined.
- Pour the strawberries on top of the pressed crumble, and add the rest of the crumble over it. Cover as much of the strawberry mixture as you can.
- Bake at 350°F (175°C) until the top is golden brown and the strawberry filling is bubbling, which should take between 35 and 45 minutes.
- Let the strawberry bars cool completely (around an hour) before removing them from the pan and cutting them.
Baker’s Secrets.

To make sure you end up with the best results, here are three baker’s secrets (that are not so secret, really):
- I cannot stress enough how using a kitchen scale is a game-changer when baking. I know the cup system is very practical, but once you try weighing your ingredients, you’ll regret not having started sooner, both in terms of texture and taste.
- Temperature is also another game changer. Always use room temperature ingredients unless stated otherwise, and preheat your oven; you’ll taste the difference.
- Finally, do not overmix your ingredients. Honestly, nine times out of ten, when someone has a problem with a dessert recipe, it’s because they overmixed their ingredients.
How to serve your strawberry bars?
While strawberry bars can perfectly be served on their own, you can also easily dress them up by adding:
- Powdered sugar: for a simple yet elegant finish.
- A dollop of whipped cream: because strawberries and cream are a classic for a reason.
- A scoop of your favorite ice cream: whether you like chocolate, vanilla, or any other ice cream flavor, they’ll fit perfectly with this delicious strawberry dessert.
How to store strawberry bars?

You can easily make these strawberry bars ahead. You have several options:
- You can store them in the fridge for up to 4 days.
- You can also store it longer in the freezer for up to 2 months. Make sure to thaw them overnight in the fridge before serving them.
Whatever option you choose, always make sure to keep your strawberry bars in an airtight container.
