This cake recipe requires different ingredients that could be substituted according to your needs :
- Butter: Your frosting will taste better using unsalted butter.
- Icing Sugar: It has to be sifted to get a smooth finish. I am personally a fan of softly sweet frostings. So, if you think the frosting is not sweet enough feel free to add more sifted icing sugar. Keep in mind it will make your frosting stiffer.
- Cream Cheese: you’ll get the best results using full-fat brick cream cheese. Nonetheless, I have used the spreadable version before and it ended up fine, but not as great.

Quantity Adaptation.
I tend to write my recipes for 3 layers of 6-inch cake tins, which also happen to be perfect for 2 layers of 7-inch cakes. You can easily adapt the recipe to use it with bigger cakes though. Simply multiply the grams measurements by:
- 1.75 to fill, cover, and decorate (in a simple manner) 3 layers of 8-inch cake pans.
- 2.20 to fill, cover, and decorate (in a simple manner) 3 layers of 9-inch cake pans.
- 2.70 to fill, cover, and decorate (in a simple manner) 3 layers of 10-inch cake pans.
Make the cream cheese frosting.
- Beat your room-temperature butter with a stand mixer (or hand mixer) for 5 minutes on high speed.
- Add the sifted sugar and cornstarch and mix again for 5 minutes. It’s important that you do so to get the best results.
- Finally, add your cream cheese and mix just until smooth.
- Set it aside until you’re ready to use it.
